Tasting Note
Enchanting aromas of wild bramble fruit, tea leaf and thyme on the nose, leading to a velvet-soft palate of dark plums, berries and cherries. Seamless balance between pure fruit, fresh acidity, polished tannins and restrained oak for classic fine dining.
In the Vineyard
From a trellised, dryland, single vineyard.
In the Cellar
After four days of cold soaking, the juice was inoculated and fermented with aerated pump-overs three times daily. Malolactic fermentation took place in 100% new French oak barrels, where the wine was left to mature for 22 months.
