Gaia 2.1 is Waterford's second release of its organic Arcadian whisky, produced from certified organic Irish barley harvested in 2016. As with the rest of Waterford's work, the focus here is on terroir and raw material rather than generic house style, resulting in a whisky that feels vivid, grain-led and full of detail.
