Description
De Toren Fusion V 2021 is the flagship of this Stellenbosch estate. It is a Left Bank-style blend of all five noble Bordeaux varieties grown on the ocean-facing Polkadraai Hills. 2021 is regarded as an outstanding Cape vintage, and this wine shows why.
Tasting Notes
The wine is deep ruby with a purple rim. On the nose there is cassis, black cherry and cranberry, then graphite, cedar, cigar box and a touch of violet. The palate is concentrated but polished, with fine-grained tannins, bright acidity and a long, mineral finish.
Blend & Maturation
The blend is led by Cabernet Sauvignon (around 53%) with Merlot, Malbec, Cabernet Franc and Petit Verdot. It spends 12 months in 225L French and American oak in a climate-controlled barrel room.

Serving & Cellaring
Decant for at least an hour and serve at 15–18°C. It pairs beautifully with roast or grilled lamb with garlic and rosemary. It can be cellared for 20 years or more.
