Individual vineyard rows of Merlot and Cabernet Sauvignon are selected and fermented in small batches followed by a barrel section showing the very best from Remhoogte. The wine is complex and concentrated showing black cherries, plums as well as savoury notes of olives and black pepper with broad polished tannins and a medium plus acidity that leads into a finish that lasts for ages.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eBordeaux varietals have been a focus since the beginning of Remhoogte Wine Estate and hence this reserve being Right Bank inspired.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eVintage Overview The 2018 growing season was a cooler year. Late rains into November followed by a moderate ripening period allowed for great hang time on the vines. This is reflected in the 2018 wines as they show great elegance and refinement. Vineyard From the highest rows of the estates 2 highest vineyards, Merlot Block 15 and Cabernet Sauvignon Block 14. The exposure of these rows to all the elements combined with the steep gradient of the slope means the vines have a very tough life and give low yields. The bunches from these portions of these vineyards are typically light with small, concentrated berries. The soil is Malmesbury shale which is the oldest soil in South Africa and one of the oldest in the world. It is a low vigour soil due to leaching over millennia with a good component of clay in the subsoil which keeps the vines going in the dry summer months. The Merlot was harvested on the 14th of March and the Cabernet Sauvignon on the 24th of March.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eCellar: The grapes are hand harvested and sorted twice in the cellar. Once as bunches on a conveyor belt and then as grapes on a vibrating sorting table. The fermentation is then allowed to occur spontaneously in 500 litre open top French oak barrels. Regular punch downs ensure optimal extraction. Malolactic fermentation takes place in 225 litre French oak barrels before maturation for 24 months in the same barrels. 50% new oak barrels are used with the remaining 50% in second fill barrels. 6000 bottles produced.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eTasting Notes Nose: Black current, mulberries, ripe plums, thyme and cedar. This shale is the oldest soil type in South Africa and one of the oldest in the world. Due to leaching of the soils over millennia they are not very fertile and therefor limit the vigour of the vines and increase the resulting quality of the grapes. Yields were up on 2019. Spring through to midsummer was warm and dry, with ripeness across the board being achieved easily. Winter rains arrived a early which hurried the harvesting of the Cabernet Sauvignon slightly. The 2020 Chronicle is Merlot driven (45%) with the balance made up of Syrah, Pinotage and Cabernet Sauvignon. Vineyard 17 vineyard blocks over 55 hectares and 8 soil types. The vines vary in age, from 10 to 26 years old. The soils near the top of the estate are shallow and very well drained where the lower slopes tend to have deeper, richer soils. This variation in terroir and varieties, and combination thereof, result in a unique, complex wine.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eCellar: All blocks are harvested and vinified separately. High on a ridge with a panoramic view of Stellenbosch and its surrounding mountains with the Atlantic Ocean in the distance. Vintage Overview 2020 saw good weather in flowering and all the way through to harvest. A relatively mild summer allowed for great ripening and good ripeness levels at harvesting. The grapes were harvested on the 7th of February.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e \u003c\/p\u003e\n\u003cp class=\"p1\"\u003eVineyards: The vineyard is a 2 hectare block of bush vines on a granitic ridge high up on the estate. It faces completely south and is therefore exposed to the prevailing summer breezes off the ocean to the south and sheltered from the heat of the afternoon sun. This allows for extended hang time of the fruit without it becoming overripe. The vines are 20 years old and yielded 5 tons per hectare for this vintage. A green harvest at 80% veraison limits the variation in ripeness in the bunches and ensures more even ripeness at harvest.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e \u003c\/p\u003e\n\u003cp class=\"p1\"\u003eCellar: The grapes are hand harvested and then sorted on a conveyor belt in the cellar. The majority of the wine is fermented uninoculated in 7000 litre French oak tanks. 30% of the stems are added back to the tanks. This portion spent 14 days on the skins before being drained. A small component (15% in the final wine) was fermented using carbonic maceration which brings freshness and lifts the fruit on the final wine. Maturation takes place in 225 litre French oak barriques for 18 months. 30% new oak is used with the remainder made up of second and third fill barriques. The wine is then racked to a large concrete tank where it is allowed to mellow for 6 months before being bottled. Unfined and unfiltered. The vineyard rows run from North-East to South-West and the vines are on a low single strand trellis. This row direction exposes the morning sun side to the prevailing southerly summer breezes and shelters the bunches from the harsher afternoon sun. The Honeybunch is made from the first pick through this vineyard, all the exposed bunches on the morning sun side only are harvested. Fermentation temperature kept between 16 and 18 degrees Celsius which slows the process down to between 4 and 8 weeks. 50 percent of the wine goes through malolactic fermentation.
